Not sure if its the gauge or the sensor. Never had my gauge setup but the sensor has been in the manifold for a while. When replacing my clutch last time, I forgot to hook up the ground strap... and the sensor sheath became the new ground. I since then checked the resistance and its neither open or closed (nominal reading). Any ideas on what else I can check or how I can test the gauge?

Get the engine nice and hot and measure the voltage across the sensor with a multimeter. The nicer ones have a setting for K-type thermocouple.

Or - buy a $5 probe meant for a multimeter and hook it to the gauge. Test with a lighter or torch.
