Chill out ... not that bad. Period.
Invest a few bucks and pressure wash everything and get it surgically clean. Costs: About $10 bucks and some labor hours. Then, I would get a dolly or something similar and start straightening out the metal. Not a biggie and its just a few labor hours. Loosen up the 13mm hood bolts and straighten the hood. You have less than one day's worth of work to that point.
Fenders: I went to the yard and no W123s. The sunny South has plenty of rust free donors. I am thinking our P-A-P wants around $35 bucks a fender. Shipping is a PITA, but doable. Even with 2 new fendors ... you got less than $100 bucks on your hands and you're fixing some screwed up fenders anyways.
So, my advice is take a step back, take a breather, and start cleaning up the project. 75% of the battle is simply cleaning and sorting out the problems. Once you get to that phase, most of the other stuff falls into place. Good job with sticking thru the process and getting the fenders off. Most folks would have quit. .
